COOKING TIME: 30 MIN-1 HOUR

INGREDIENTS

  • 4 large bell peppers (any colour), tops removed and seeds removed
  • 450g ground beef
  • 85g black beans, drained and rinsed
  • 190g cooked quinoa or rice
  • 270g corn kernels (fresh, frozen, or canned)
  • 200g diced tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon chilli powder
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • 125g shredded cheese (cheddar, mozzarella, or a mix of the two)
  • 1 small onion, finely chopped
  • chopped fresh parsley, for garnish
  • salt and pepper to taste

INSTRUCTIONS

  1. Preheat your Kamado Joe to 175°C using indirect heat setup with a deflector plate in place.
  2. In a skillet or cast-iron pan, cook the ground beef over medium heat until browned. Break it into smaller pieces as it cooks. Remove any excess grease.
  3. Add the chopped onion and minced garlic to the pan with the cooked beef. Sauté for about 2-3 minutes until the onion becomes translucent.
  4. Stir in the diced tomatoes, corn, black beans, ground cumin, chilli powder, paprika, salt, and pepper. Let the mixture cook for an additional 5-7 minutes, allowing the flavours to meld. Remove from heat.
  5. In a large mixing bowl, combine the cooked quinoa or rice with the meat and vegetable mixture. Mix well until everything is evenly distributed.
  6. Carefully stuff the bell peppers with the quinoa and meat mixture. Press the mixture down gently as you fill the peppers.
  7. Sprinkle shredded cheese over the top of each stuffed bell pepper.
  8. Place the stuffed bell peppers on the grill grate of your Kamado Joe. Close the lid and cook for about 45-50 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  9. Carefully remove the stuffed bell peppers from the grill using heat-resistant gloves or tongs. Let them cool slightly before serving.
  10. Garnish the stuffed bell peppers with chopped fresh parsley or cilantro for a burst of freshness and colour.
11.Serve as a delicious and hearty main course. They can be enjoyed on their own or with a side salad for a well-rounded meal. Enjoy!
